Shrimp Fried Rice

This is an easy, 20 minute recipe and tastes better than takeout. The shrimp is tender and juicy and the rice, eggs and veggies combined make it a very healthy and quick dinner that your family will appreciate.

Ingredients

  • 3 cups white rice

  • 3 cups water

  • 4 cups raw peeled and deveined, tails removed (I use frozen for this recipe, unthawed)

  • 1 cup frozen sweet peas

  • 1 Tablespoon vegetable oil (substitute olive oil for a healthier alternative)

  • 1/2 of an onion, diced

  • 2 cloves garlic, minced

  • 2 eggs

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper

  • soy sauce, to desired taste

Directions

  • Heat the oil in a large size skillet. Add the shrimp and cook over medium-high heat for about 3 minute, until heated throughly.. Flip the shrimp once halfway through for even cooking. Remove the shrimp with a slotted spoon so you leave all the oils and juices in the skillet. Place the shrimp on a plate.
  • Add the peas, garlic and onion and cook for 2 minutes or until desired tenderness. Stir intermittently throughout cooking.
  • Push the vegetables to the side, add the eggs to the other side of the skillet. Cook to scramble the eggs, stir as needed.
  • Boil the rice according to package directions.
  • Add the rice and then the shrimp to the peas, garlic, onion and eggs. Drizzle with soy sauce. Evenly season with salt and pepper, stir to combine. Cook for about 2-3 minutes, until all ingredients are heated through.
  • Drizzle with soy sauce once more and enjoy!
