Kielbasa and Veggies over Rice

Ingredients

  • 1 T vegetable oil (taste)

  • 1 pkg kielbasa sausage (sliced into 1″ pieces)

  • 3 peppers (diced) Any color

  • 1/2 onion (chopped)

  • 1 Tablespoon butter

  • Salt & pepper (taste)

  • Rice (cooked according to package directions)

  • *soy sauce or yum yum sauce to your liking

Directions

  • In a skillet over medium heat, add 1 T vegetable oil and the kielbasa sausage. Continue cooking and occassionally stirring for 5-7 minutes or until even browned on all sides.
  • Remove the kielbasa from the pan do not drain grease and set aside.
  • Cook the peppers and onions in the same pan. Add 1 Tablespoon of butter and salt and pepper to taste. Continue cooking for about 3 to 5 minutes or to your liking.
  • Once vegetables are cooked, add the kielbasa to the pan and cook for 2 more minutes. While this is cooking, make your rice according to package directions.
  • Add your rice to a bowl and top with kielbasa and veggies. Top with soy sauce or yum yum sauce if desired. Enjoy!
