Ingredients

  • 3 large russet potatoes, peeled and cubed

  • 1/2 cup milk

  • 1/4 cup butter or less (to taste)

  • 1 tsp salt

  • 1 tsp pepper

Directions

  • In a large pot over medium to high heat, place 3/4 full of water, add a tablespoon of salt, and then the potatoes. Bring to a boil. Reduce heat to medium-low, cover, and simmer until tender, 25 minutes.
  • Drain potatoes, and return to the pot.
  • Turn heat to high to allow potatoes to dry for about 25 seconds. This is just a quick drying, don’t overdry. Turn off heat.
  • Next, mash the potatoes with a masher or with a fork twice around the pot. Do not use an electric mixer or your potatoes will be too whipped. Add the milk and butter. Whisk in salt and pepper. Serve.
