Potatoes, Peppers, Mushrooms & Garlic

Ingredients

  • 2 medium russet potatoes

  • 1/2 medium onion

  • 1/2 medium bell pepper (I used red but any will work)

  • 1 Tablespoon of olive oil

  • 1/2 Tablespoon Webber roasted garlic & herb seasoning (optional)

  • Salt & Pepper to taste

Directions

  • Dice the potatoes, onions, peppers and mushrooms into 1/4″ pieces. Then dice the garlic fine.
  • Heat the oil in a large skillet over medium high heat.
  • Add the onions, garlic and potatoes to the skillet.
  • Season with salt & pepper.
  • Season with 1/2 Tablespoon Webber roasted garlic & herb seasoning (optional).
  • Let the veggies cook for 10 minutes or until they are brown and crispy around the edges.
  • Add the peppers and mushrooms. Continue cooking another 7 minutes or until desired tenderness.
  • Season with salt & pepper to taste.

Notes

  • SERVE WITH GRILLED CHICKEN, BREAD & A SALAD!
