Sausage, Onions & Smoked Sausage

Ingredients

  • 5 links hot italian sausage

  • 2 Tablespoons olive oil

  • 1/2 lb assorted sweet peppers, seeded

  • 1 small onion, sliced

  • 5 large Yukon gold potatoes, quartered

  • 2 teaspoons dried italian seasoning

  • 2 teaspoons kosher salt

  • 1 teaspoon dried parsley

  • 1 Tablespoon olive oil

  • salt & pepper, to taste

Directions

  • Preheat oven to 450 F.
  • Heat olive oil in a skillet on medium heat. Cook sausage links until brown, about 3 minutes on each side. Remove the sausage and cut into serving sized pieces.
  • Quarter the peppers and place in a big mixing bowl. Then add the onion and potatoes. Then add the sausage and all of its juices into the bowl.
  • Season with salt, pepper, seasonings and drizzle with 1 Tablespoon of olive oil
  • Mix all of the ingredients together with your hands, for about 3 minutes to make sure all ingredients are evenly blended. Transfer to a large, heavy duty roasting pan. Lay the potatoes on the top.
  • Place in the oven until everything is caramelized, about 45 minutes.
