Just like my mom used to make but with a Mexican version twist.
Mexican Tater Tot Casserole

Ingredients
1 lb ground beef, browned
1/2 yellow onion, diced
1 can black beans
1 can rotel
1 taco seasoning packet divided half and half
Tator tots (enough to cover top layer)
Mexican cheese divided 1/2 cup and 1 cup
*Enchilada Sauce (to liking if desired) I do not use this
Directions
- In a pan, brown the beef then drain and rinse. Next, add the onion for 2 minutes. Then add half of the taco seasoning packet and cook according to the package.
- Add the ground beef mixture, beans, rotel, enchilada sauce (if desired) and other half of taco seasoning packet in a large size bowl and mix thoroughly. Place this in a 9×13 baking dish. Top with a full layer of tater tots.
- Bake at 400F for 25 minutes. Then top with remaining cheese and put back in the oven for 5 minutes or until heated through and cheese is melted.
