Mexican Tater Tot Casserole

Ingredients

  • 1 lb ground beef, browned

  • 1/2 yellow onion, diced

  • 1 can black beans

  • 1 can rotel

  • 1 taco seasoning packet divided half and half

  • Tator tots (enough to cover top layer)

  • Mexican cheese divided 1/2 cup and 1 cup

  • *Enchilada Sauce (to liking if desired) I do not use this

Directions

  • In a pan, brown the beef then drain and rinse. Next, add the onion for 2 minutes. Then add half of the taco seasoning packet and cook according to the package.
  • Add the ground beef mixture, beans, rotel, enchilada sauce (if desired) and other half of taco seasoning packet in a large size bowl and mix thoroughly. Place this in a 9×13 baking dish. Top with a full layer of tater tots.
  • Bake at 400F for 25 minutes. Then top with remaining cheese and put back in the oven for 5 minutes or until heated through and cheese is melted.
