White Chicken Chili

Ingredients
3 skinless boneless chicken breasts
1 1/2 block of cream cheese (doesn’t have to be exact)
1 can of Rotel diced tomatoes (Not drained)
2 cans of corn (Not drained)
2 cans black beans (drained)
Ranch Seasoning packet
Taco Seasoning packet
1/2 onion (diced)
salt and pepper (to taste)
Directions
- Place the chicken into the slow cooker.
- Add the cream cheese, rotel tomatoes, corn, black beans, seasoning packs, onion and salt and pepper. Stir to combine, except leave the chicken as the bottom layer. This doesn’t have to be mixed too good just as long as the vegetables are mixed somewhat with the seasonings. The cream cheese will melt and the slow cooker will work its magic and do the rest!
- Cook on low for 5-7 hours. This can be cooked on high for 4 hours if in a hurry.
- Once the chicken is fully cooked and ready to shred, take it out of the slow cooker and place on a plate to shred then put back into the slow cooker. Stir all ingredients. Let the flavors continue to cook on low for 10 minutes. Serve and enjoy!
Notes
- *My daughter loves this soup but doesn’t care for the corn. You can make this recipe and omit the corn.
- *We enjoy this served with shredded cheese and sour cream on top in our bowls.
- *Can serve this with grilled cheese or panini
