Ingredients
2 medium russet potatoes
1/2 medium onion
1/2 medium bell pepper (I used red but any will work)
1 Tablespoon of olive oil
1/2 Tablespoon Webber roasted garlic & herb seasoning (optional)
Salt & Pepper to taste
Directions
- Dice the potatoes, onions, peppers and mushrooms into 1/4″ pieces. Then dice the garlic fine.
- Heat the oil in a large skillet over medium high heat.
- Add the onions, garlic and potatoes to the skillet.
- Season with salt & pepper.
- Season with 1/2 Tablespoon Webber roasted garlic & herb seasoning (optional).
- Let the veggies cook for 10 minutes or until they are brown and crispy around the edges.
- Add the peppers and mushrooms. Continue cooking another 7 minutes or until desired tenderness.
- Season with salt & pepper to taste.
