Ingredients

  • 1 lb lean ground beef

  • 1 lb ground sausage

  • 1/2 cup uncooked long grain white rice

  • 2 cups water

  • 5 peppers (your desired color)

  • 2 (8 oz) cans tomato sauce

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon italian seasoning

  • 1/2 teaspoon Mrs. Dash Garlic & herb Salt- Free Seasoning (optional)

  • salt & pepper to taste

  • 1/2 onion

  • 1 clove garlic, minced

  • 1 cup tomato sauce

  • 2 cups finely shredded mozzarella cheese

Directions

  • Preheat oven to 350 F.
  • Place the rice and water in a pot and bring to boil. Reduce heat, cover and simmer for 20 minutes.
  • In a skillet over medium heat, cook the beef and sausage until brown; drain. Return to heat and mix in the rice, onion, garlic, garlic powder, onion powder, Italian seasoning, Mrs. Dash seasoning (optional) and salt and pepper (to taste). Once heated through, pour in the tomato sauce and mix to combine the flavors. Let simmer about 10 minutes. Remove from heat.
  • Place peppers in a medium sauce pan with enogh water to cover them. Bring to a boil and cook for 10 minutes. Remove peppers and place in a 9×13 baking dish.
  • Remove the tops and seeds from the peppers. Arrange peppers in a baking dish with the cut side facing upward so it’s ready to be stuffed.
  • Fill each pepper with an even amount of mixture. With the remainder cup of tomato sauce, evenly poured over the peppers.
  • Bake for 45 minutes until the mixture begins to get golden brown.
  • Sprinkle mozzarella cheese over the top of each pepper. Return to the oven and bake until cheese is golden brown, about 4 to 8 minutes.
