Caramelized onions and sausage.. is there anything better?!

Ingredients
5 links hot italian sausage
2 Tablespoons olive oil
1/2 lb assorted sweet peppers, seeded
1 small onion, sliced
5 large Yukon gold potatoes, quartered
2 teaspoons dried italian seasoning
2 teaspoons kosher salt
1 teaspoon dried parsley
1 Tablespoon olive oil
salt & pepper, to taste
Directions
- Preheat oven to 450 F.
- Heat olive oil in a skillet on medium heat. Cook sausage links until brown, about 3 minutes on each side. Remove the sausage and cut into serving sized pieces.
- Quarter the peppers and place in a big mixing bowl. Then add the onion and potatoes. Then add the sausage and all of its juices into the bowl.
- Season with salt, pepper, seasonings and drizzle with 1 Tablespoon of olive oil
- Mix all of the ingredients together with your hands, for about 3 minutes to make sure all ingredients are evenly blended. Transfer to a large, heavy duty roasting pan. Lay the potatoes on the top.
- Place in the oven until everything is caramelized, about 45 minutes.
