Ingredients
3 cups white rice
3 cups water
4 cups raw peeled and deveined, tails removed (I use frozen for this recipe, unthawed)
1 cup frozen sweet peas
1 Tablespoon vegetable oil (substitute olive oil for a healthier alternative)
1/2 of an onion, diced
2 cloves garlic, minced
2 eggs
1/2 teaspoon salt
1/2 teaspoon pepper
soy sauce, to desired taste
Directions
- Heat the oil in a large size skillet. Add the shrimp and cook over medium-high heat for about 3 minute, until heated throughly.. Flip the shrimp once halfway through for even cooking. Remove the shrimp with a slotted spoon so you leave all the oils and juices in the skillet. Place the shrimp on a plate.
- Add the peas, garlic and onion and cook for 2 minutes or until desired tenderness. Stir intermittently throughout cooking.
- Push the vegetables to the side, add the eggs to the other side of the skillet. Cook to scramble the eggs, stir as needed.
- Boil the rice according to package directions.
- Add the rice and then the shrimp to the peas, garlic, onion and eggs. Drizzle with soy sauce. Evenly season with salt and pepper, stir to combine. Cook for about 2-3 minutes, until all ingredients are heated through.
- Drizzle with soy sauce once more and enjoy!
