Slow Cooker Beef and Noodles

Ingredients
Cooking Spray
1 T red cooking wine
1-3 lb boneless beef chuck roast
1 T salt (or to taste)
1 T pepper (or to taste)
1/4 cup all purpose flour
1 (1.2 oz) pkg dry beef gravy mix
1 (1 oz) pkg ranch dressing mix
1/2 (.7 oz) pkg dry Italian-style salad dressing mix
1/2 cup and 2 cups beef broth (divided, the 2 cups may be more or less depending upon the size of your roast. I mix 1 1/2 cups with the cream of mushroom and then I add to the slow cooker if it needs more. Make sure it’s enough to cover all potatoes and meat).
1 can cream of mushroom soup
1 pkg egg wide noodles or Kluski noodles (boiled according to package directions)
Directions
- Spray slow cooker with cooking spray.
- Place the onions at the bottom of the slow cooker. Pour the red cooking wine over the onions and give a quick stir to make sure the onions are covered. Spread the onions out in the slow cooker.
- Pat the roast dry and sprinkle all over with salt and pepper. Spread the flour in a shallow pan and turn the roast over in it to coat all sides. Pat the flour down onto the meat so it stays on the roast as much as possible. Place the roast on top of the onions in the slow cooker.
- In a medium bowl, whisk together beef gravy mix, ranch dressing mix, and Italian dressing mix in a bowl, add 1/2 cup beef broth and whisk to combine until it is smooth and mixed together. Pour over the roast.
- In the same medium bowl used for the dry seasoning packs, mix the 1 1/2 cups beef broth and cream of mushroom soup. Mix it together to combine. Add to the slow cooker. The beef broth should cover the meat. If it doesn’t, add more beef broth until it does. This step is important so that the meat cooks properly and has the gravy deliciousness.
- Cook on low for 8 hours. Enjoy. We like this meal served with breadsticks and a salad. You will Love this recipe but make sure you leave some for leftovers, we didn’t think it was possible, but this meal somehow even gets better on day two after the flavors all blend more.
