Do you love stuffed peppers and also like to save yourself time in the kitchen?! This is such a simple and delicious way to enjoy the flavors of stuffed peppers without all the added hassle. Full of your favorite sausage and ground beef, peppers, onions, garlic, tomato sauce, tomato paste, rice, and a topping of shredded cheese. This is one of my go to recipes if I’m heading to a potluck or looking for that simple Sunday meal to feed plenty.
Unstuffed Pepper Casserole

2 lb total of ground beef, sausage, or a mixture of both (I prefer to use 1 lb ground beef with 1 lb spicy sausage)
1 to 2 Tablespoons olive oil (refer to directions)
3 large bell peppers (any color, cut in strips)
1/2 onion (diced)
3 cloves garlic (minced)
2 cups white rice (your favorite and cooked)
2 cups beef broth (more can be added later if too dry)
8 oz diced tomatoes (seasoned diced tomato can is fine)
15 oz tomato sauce
8 oz tomato puree
1 Tablespoon of Dales seasoning sauce (1 T of Worcestershire sauce can be used instead)
1 teaspoon chili powder
1 cup shredded cheddar cheese
Salt and pepper (to taste)
1 cup shredded cheddar cheese
Directions
- Preheat the oven to 375 degrees. Spray a 9×13 oven safe casserole dish with nonstick spray, set aside.
- In a large skillet over medium-high heat, brown the meat. I personally like to separate my meat while cooking. I add 1 tablespoon of olive oil to the pan and brown the sausage. In another skillet, I add a tablespoon of olive oil and then the beef. Continue cooking until brown. The sausage usually takes a few more minutes than the beef. Drain, set aside.
- Using one of the skillets already used (your largest one), saute your vegetables over medium heat for five minutes or to your liking. Turn the skillet to low and add the meat to the skillet.
- Boil the rice according to package directions. Drain, rinse, and add to the skillet with the meat and veggies.
- Add the beef broth, diced tomatoes, tomato sauce, tomato puree, Dales seasoning, chili powder, and 1 cup cheese to the skillet and mix to combine flavors. Add salt and pepper if desired.
- Add all ingredients to the sprayed casserole dish. Top with the remaining 1 cup of cheese. Cover with aluminum foil. Bake for 35 minutes or until heated through. Enjoy!

- I enjoy sprinkling some extra cheese once it’s in my bowl!
