Pot Roast and Potatoes Slow Cooker Style

Holy cow are you in the mood for a fall apart and melt in your mouth pot roast and potatoes recipe? Better yet, are you looking for an easy throw everything in the slow cooker mood. Why waste your time today when the slow cooker can do all of the magic for you in this delicious savory recipe. This without a doubt will be your new pot roast go to. You might as well throw all of those other almost good but not quite right pot roast recipes out of the kitchen now because this is just that good! I’m talking this up a lot but just trust me give it a try and you’ll understand! I’m pretty sure the hubby licked his plate clean.

This pot roast and potatoes slow cooker style recipe is so fork tender and flavorful you’ll be wondering where it’ s been all your life. I don’t think I will ever make pot roast any other way now. Definitely won’t be searing my roast before adding it to the slow cooker, with this recipe that step just seems so silly and not needed.

Can you cook pot roast on high? Absolutely positively nada, no, heck no. The meat comes out tender and fall apart by letting it cook low and slow all day for eight hours. You throw all the ingredients in and let it do it’s magic all day long but do not try and speed this meat up. It will not like you and will in exchange be tough and dry. Ingredients

  • Cooking Spray

  • 1/2 onion (sliced)

  • 1 T red cooking wine

  • 1-3 lb boneless beef chuck roast

  • 1 T salt (or to taste)

  • 1 T pepper (or to taste)

  • 1/4 cup all purpose flour

  • 1 (1.2 oz) pkg dry beef gravy mix

  • 1 (1 oz) pkg ranch dressing mix

  • 1/2 (.7 oz) pkg dry Italian-style salad dressing mix

  • 1/2 cup and 2 cups beef broth (divided, the 2 cups may be more or less depending upon the size of your roast. I mix 1 1/2 cups with the cream of mushroom and then I add to the slow cooker if it needs more. Make sure it’s enough to cover all potatoes and meat).

  • 1 can cream of mushroom soup

  • 6 small potatoes (if desired, peeled and cubed)

  • 10 carrots (if desired)

  • 10 mushrooms (if desired and your favorite)

Directions

  • Spray slow cooker with cooking spray.
  • Place the onions at the bottom of the slow cooker. Pour the red cooking wine over the onions and give a quick stir to make sure the onions are covered. Spread the onions out in the slow cooker.
  • Pat the roast dry and sprinkle all over with salt and pepper. Spread the flour in a shallow pan and turn the roast over in it to coat all sides. Pat the flour down onto the meat so it stays on the roast as much as possible. Place the roast on top of the onions in the slow cooker.
  • In a medium bowl, whisk together beef gravy mix, ranch dressing mix, and Italian dressing mix in a bowl, add 1/2 cup beef broth and whisk to combine until it is smooth and mixed together. Pour over the roast.
  • Place the potatoes around the roast and on top.
  • In the same medium bowl used for the dry seasoning packs, mix the 1 1/2 cups beef broth and cream of mushroom soup. Mix it together to combine. Pour over the potatoes. The beef broth should cover the potatoes and meat. If it doesn’t, add more beef broth until it does. This step is important so that the potatoes cook properly and has the gravy deliciousness.
  • Cook on low for 8 hours. Enjoy. We like this meal served with breadsticks for dipping in this to die for gravy.
